Recipe: White Bean Salad with Arugula

Another quick, easy and healthy vegetarian recipe using super food Cannellini beans!

Cannellini beans lead the pack of low glycemic beans,  have a detoxifying effect on the body and

are supercharged with antioxidants!



1/2 cup olive oil
3 tablespoons red wine vinegar
2 tablespoons chopped chives
3 crushed garlic cloves
1/2 teaspoon honey
1 teaspoon dry tarragon leaves
1/8 teaspoon nutmeg
1/2 teaspoon salt
Pinch of hot sauce

5 cups or 3 cans of white kidney beans (cannellini beans)
1/3 cup fresh Italian parsley

Mix all ingredients except for parsley and beans in a jar with lid.

Mix with beans and parsley in large bowl and let stand at room temp for one hour.

Serve over bed of Arugula and mix together.

Yum!
